Quiche is our favorite brunch idea. It’s tasty, juicy and healthy. Of course, you have to pick the right ingredients. Quiche recipes usually include eggs, cream and cheese. Some like to add meat, fish or different veggies. The pastry dough is the best finish.
This French delicacy was first made in the 1920s in Alsace-Lorraine. Some believe the name comes from the German word for cake.
It’s time to change your menu, and add healthy versions of your favorite recipes. You can use sweet potatoes for a gluten free version. You will need 20 minutes to make this incredible delicacy.
Spinach and Feta Quiche with Sweet Potato Crust
- 4 large eggs
- 2 large egg whites
- 1.5 ounces feta cheese, crumbled (about 1/3 cup)
- 1 (5-oz.) bag fresh baby spinach
- 1/2 cup whole milk
- Avocado oil
- 2 medium-sized sweet potatoes, peeled and cut into 1/8-inch-thick slices
- 1/2 cup sliced red onion
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp crushed red pepper
First, preheat your oven to 350°F. You need a 9-inch baking dish for this recipe. Grease the bottom with avocado oil. Spread your sweet potato slices in one layer, but make sure the pieces overlap a little. Brush with oil, and roast for 20 minutes.
Bring the temperature in your oven to 375°F. Saute your onions in a cast iron skilled for a few minutes. Add in your spinach and cook for another 3 minutes. Let it cool.
In a bowl, whisk your egg whites, milk, salt, black pepper and red pepper. Add your cooked spinach to the baking dish, and pour over the egg mixture. Scatter salty feta on top.
Bake your quiche for 35 minutes. Let it cool for 5 minutes and enjoy!

- Use unsweetened almond milk instead of regular milk.
- Use vegan feta cheese instead of regular feta. You can also use kalamata olives.
